Badam burfi

I am a theeviramaana foodie....All my cooking recipes are like fusion..... from amma's recipe and my own twisted one with less oil, less salt etc....My first try here is to give my favourite sweet which I make on my own without getting tips from my mom.... my daughter and hubby relishes this only sweet of mine...

Badam Burfi....

Ingredients:

Badam - 1 cup
Sugar - 1 - 11/4 cups
ghee- 50 gms.

Method:

1. Soak badam in hot water and peel the skin.
2. Grind it to a fine paste.
3. Put the sugar in a pan, pour some water and allow it to boil.
4. When the sugar comes to a thick and single thread consistency, add the finely ground badam paste to it.
5. Add the ghee slowly.
6. When the mixture seperates from the pan, put the mixture in a foil or plate (greased with little ghee) and cut into diamond shape and allow it to cool.
7. Decorate with saffron.

Food For A Thought

Take a healthy diet. Eat plenty of vegetables, fruits, grains and legumes, ofcourse don’t forget the non-veggies in moderate…… Eat a wide variety of foods with enough calories but not too many. Keep portions moderate, drink 8 to 12 glasses of water. Limit sugary foods and salt, ofcourse you can enjoy your sweets and savories in moderation.
Take time to eat, chew your food well.Todays fast life people are in such a hurry they don’t even have the time to chew their food…. Its swallow swallow……
Have small meals rather than having a full meal.
Here is an excellent recipe which my best friend shared it with me, and now it’s for all of you.

Ingredients-

Olive oil 1tbsp
Finally chopped ginger 1/2tsp
Finally chopped garlic 1/2tsp
Finally chopped chilly 1[deseeded]
Any sprouts 1cup
Finally chopped spinach 1cup
Finally chopped cabbage 1cup
Finally sliced carrots 1/2cup
Finally sliced beetroot 1/2cup
Finally sliced cucumber 1/2cup
Finally sliced red, yellow,
green capsicum 1cup
Finally sliced mushroom 1cup
Finally chopped tomatoes 1cup [deseeded]
Lemon juice 1tbsp
Salt to taste

Method-

In a pan take 1/2tbsp of oil, sauté the ginger, garlic and the sprouts.
Remove from the pan.
Like this sauté the rest of the vegetables separately and keep aside.
Finally mix all together add the lemon juice and salt to taste.
In a platter take some lettuce leave arrange it pour the mixture on top
and decorate with sliced tomatoes.

I love it I hope you all do.
